Healthy Eating
With winter upon us I look forward to the chilly air, hot drinks, winter jackets, falling snow, boots, seasonal beers, hoodies, and packing on my winter weight. Actually scratch that, I HATE that part about winter, but it's inevitable for me. I seem to pack on a good 5lbs right around this time of the year, then another 5 after the holidays. Then every year my New Years Resolution is to get back into shape and it's a vicious cycle.
With that all being said, I'm trying not to allow myself to gain that winter weight in the first place. But as soon as there is that chill in the air I can't bring myself to eat chicken salads like I do all summer long. I want hearty, warm, home-cooked food. So I've been trying to scour Pinterest for some healthy alternatives. Today I bring you Chicken Alfredo Spaghetti Squash.
It's really quite simple and a really good way to trick yourself {at least I'm able to trick myself} into thinking you're eating something much more hearty and delicious. I try to steer clear of carbs as much as possible. {another downfall of cold weather, I just want to snack away on carbs: chips, crackers, chex mix, and bread as opposed to the raw veggies and hummus I enjoy during summer months.} So I was delighted to see that spaghetti squash is once again available at local grocery stores!
I bake it in the oven {whole} on 375° for an hour. Then slice it in half with a serrated knife, let it cool, remove the seeds and the gunk {you'll know what I'm talking about} Then scrape out the insides with a knife to shred the squash into strands {See pic below}

I then shredded chicken breasts to put on top of the strands of squash and finished it off with a light alfredo sauce mixed with a standard marinara sauce. Clearly the "noodles" are a different consistency from normal pasta, but if you can get past that, the taste is all the same!
I will try to post some more healthy meal options along with my sparse fashion posts. I'm trying to post more, once again, my blog has taken a backseat to my busy busy life, but I plan to post at least every OTHER day.

The Slow Transition to Fall
I have a love/hate relationship with this time of the year, sure I love the crisp air, football games, and above all, the pumpkin beers that come out (I'm not your typical girlie girl who's obsessed with the pumpkin lattes, Nope! I got straight for the beers!) But I start to reminisce in my closet over all the summer clothes that never {or barely} made an appearance over the summer. So I try my hardest to try to transition some of my summer pieces and make 'Fall-like' outfits.
The weather in Ohio has been bi-polar lately! It was in the 90's when I got back from Mexico last week, then dropped down into the low 50's {which felt near freezing!} Then it was in the upper 60's/low 70's all week, and today we have a high of 80°. If you're from Ohio, you get it, you have your heat blasting in your car on your way to work and all your windows down and turn your air on in your house when you get home. If you're not, then you probably think this is all crazy talk!

Fall Shopping Spree
So, being the fabulous husband he is, Trey is letting me take some of the extra money we didn't use for our wedding (is it possible we actually saved too much?!) and letting me go on a $1000 shopping spree this weekend for fall essentials. Since this will probably NEVER happen again, I've been researching all the best fall staples and have come up with a little list of things that will probably make my closet.
What are some of your favorite fashion trends and what would you buy if you could go on a $1000 shopping spree? Seriously let me know because I don't want to miss out on something I could have bought but didn't find out till afterwards!!

I wrote this post Tuesday and actually went to Target after work and snatched up the 3.1 Phillip Lim for Target tote with gusset.
{Which looks disturbingly close to the Pashli leather bag, for a mere $54.99!}

It's been a Long Hot Summer...
...Well actually it hasn't, but it's been a long while since I've been on the blog. It was a crazy summer, we hit up the annual Jamboree in the Hills for my birthday (July 20) I went to Vegas for my bachelorette party in August, then September 1st I married the love of my life and we had an amazing honeymoon in Mexico :) I'm finally back to 'real life' and somewhat missing all the planning and excitement, but it also feels good to just have my life back. I'm still working crazy hours and started doing Crossfit at 6am, 3 times a week, but everything is just fabulous :)
