With that all being said, I'm trying not to allow myself to gain that winter weight in the first place. But as soon as there is that chill in the air I can't bring myself to eat chicken salads like I do all summer long. I want hearty, warm, home-cooked food. So I've been trying to scour Pinterest for some healthy alternatives. Today I bring you Chicken Alfredo Spaghetti Squash.
It's really quite simple and a really good way to trick yourself {at least I'm able to trick myself} into thinking you're eating something much more hearty and delicious. I try to steer clear of carbs as much as possible. {another downfall of cold weather, I just want to snack away on carbs: chips, crackers, chex mix, and bread as opposed to the raw veggies and hummus I enjoy during summer months.} So I was delighted to see that spaghetti squash is once again available at local grocery stores!
I bake it in the oven {whole} on 375° for an hour. Then slice it in half with a serrated knife, let it cool, remove the seeds and the gunk {you'll know what I'm talking about} Then scrape out the insides with a knife to shred the squash into strands {See pic below}
I then shredded chicken breasts to put on top of the strands of squash and finished it off with a light alfredo sauce mixed with a standard marinara sauce. Clearly the "noodles" are a different consistency from normal pasta, but if you can get past that, the taste is all the same!
I will try to post some more healthy meal options along with my sparse fashion posts. I'm trying to post more, once again, my blog has taken a backseat to my busy busy life, but I plan to post at least every OTHER day.
